Easy Breakfast

Yesterday for lunch I packed a salad, multigrain tortilla chips and salsa, and some grapes. I opened up my bag around noon and realized that, once again, I forgot salad dressing. I hate when I do dumb things like that! I’m such a bad planner. To improvise, I decided I’d try putting the salsa on my salad and eating the chips plain. It turned out to be really yummy! I Google’d “salsa as salad dressing” to see if I was the only weirdo to ever try this, but apparently people do it all the time! And salsa happens to be a healthy alternative to salad dressing which is even better! Try it out and see if you like it too!

This morning I made a simple breakfast that I definitely plan on making again tomorrow. All you need is some vanilla yogurt, fresh fruit of your choice (I had strawberries), and granola (I used “Just Bunches!” the Honey Bunches of Oats clusters). Mix them all up and eat it! So easy, but so so good! If you want to be fancy, layer each ingredient in a clear drink cup so it looks pretty. Since I was in a hurry this morning I mixed it all up quickly and brought it to work with me.
